Veggie Fried Rice w/ Teriyaki "Chicken" & Fresh Pineapple Chunks

Ingredients Serving: 4

- 2 cups of cooked rice (i used basmati rice)

- 4 to 5 tbsp of low sodium soy sauce

- 1 tsp toasted sesame oil

- 1 tsp chili garlic sauce

- 1 tbsp olive oil (more or less)

- 2 tbsp teriyaki sauce

- 2 cloves garlic, minced

- 2 shallots, sliced lengthwise

- 1 red onion

- 3 green onions sliced, thinly (save some for garnish)

- 1 small red bell pepper, diced

- 2 medium size carrots, diced in rounds

- 1 small head of broccoli

- 1 cup of fresh pineapple chunks

- 1 cup of "chicken" chunks (i used Migros V-Love brand)

- black sesame seeds (for garnish)



Instructions

  1. In a medium/large size pan, heat some olive oil, once warm add the "chicken" and toss and sauté for a minute. Next add the teriyaki sauce and toss and coat the "chicken" well. Continue to sauté on medium high heat, stirring often to make sure all sides get crispy. Once the "chicken" is cooked to your desired preference, sit aside in a bowl.

  2. In that same pan (or a new pan if you want), add a more olive oil, the garlic, onion, shallots & green onions and sauté for about 3-5 minutes or until the onions become translucent and fragrant, stirring occasionally adding about 1 tbsp of the soy sauce and sauté. Next add the carrots, bell pepper & broccoli, sauteing for another 5+ minutes adding a little more soy sauce if needed.

  3. Add cooked rice, teriyaki "chicken", fresh pineapple chunks and remaining sauces, toss and mix well. Cook over medium heat for another 5-10 minutes, stirring frequently. At this time taste the fried rice and adjust any seasonings/sauces to your liking. I usually add a little more soy sauce.

  4. Serve warm with your choice of garnishes, i like to sprinkle some fresh green onions, thai basil and sesame seeds. If you want some extra spice add more garlic chili sauce or some sriracha. Enjoy!
