Spicy Ramen Noodles

Ingredients Serving: 3 - 4


- 1tbsp of olive oil

-6 cloves of garlic chopped

-2 inch piece of ginger peeled and diced

-1 yellow onion

-6 cups of vegetable broth

-3 tbsp of soy sauce or tamari (more or less depending on your taste)

-1 1/2 tbsp of miso paste

-sriracha (to taste)

-Ramen noodles


Toppings

-2 bunches of baby bok choy

- Extra-firm Tofu (i used a smokey tofu)

-1 package of Mushrooms (diced)

-1Jalapenos

-1 bunch of green onions

-cilantro

-chili oil



Instructions

  1. Heat a large pot over medium high heat, add the oil and once hot add the garlic, ginger and onion. Saute them for about 5-6 minutes stirring often, until the onion becomes translucent and slightly browned.

  2. Next add the vegetable broth, soy sauce/tamari and whisk combining the garlic, ginger and onions. Cover and simmer the broth for about 10 minutes, then add the miso paste.

  3. During this time saute the mushrooms, heat up a medium pan with olive oil, once warm add the mushrooms and saute. After a 2 minutes add a splash of soy sauce and continue to saute until the mushrooms are cooked and set aside.

  4. Next add the sriracha to the broth, taste the broth adding more soy sauce/tamari if desired.

  5. Next add the ramen noodles and cook according to the packet (usually 5 minutes)

  6. When the noodles are cooked, add the smokey tofu, bok choy and cooked mushrooms, sprinkle on top with green onions, cilantro and a couple jalapenos and enjoy!
