Green Curry Noodles




Ingredients Serving: 2

- 1 package of rice noodles

- 2 cloves of garlic, minced

- 2 tbsp olive oil

- 1 medium shallot, sliced lengthwise

- 1 cup diced mushrooms

- 1 medium yellow onion, diced

- 2 cups of spinach (2 large handfuls)

- 3 green onions, sliced

- 1 cup vegetable broth

- 1 cup coconut milk/cream

- 3 tsp green curry paste (more or less depending on preferred taste)

- 1 tbsp thai spices

- salt and pepper to taste

- fresh cilantro



Instructions

  1. Bring a large pot of water to boil and cook the rice noodles according to the instructions and rinse under cold water and set aside.

  2. In a medium size pan add the olive oil and heat on medium high, once warm add the garlic and sauté for a minute then add the onion, shallots, green onions and mushrooms, sprinkle with thai spices and sauté for another 5 minutes, until fragrant.

  3. Add the green curry and toss, then stir in the vegetable broth & coconut milk. Continue to cook on medium heat, stirring the broth. Taste, adjusting flavors to preferred preference.

  4. Once the broth is to your preferred liking, add the noodles and spinach to the broth, mix well. Once warm, serve right away. Garnish with fresh cilantro, green onions and sprinkle with thai spices. Enjoy!
