
Ingredients Serving: 4-5
-6 shallots thinly sliced
-4 scallions thinly sliced (vertical)
-1/2 cup vegetable oil (more if needed)
-half a block of firm tofu
-1 package of your choice of asian noodles (I used udon)
-3 tablespoons of light soy sauce
-2 tablespoons of dark soy sauce
-sriracha (as much as you prefer spice level)
-2 table spoons sesame oil (toasted)
-sesame seeds optional to sprinkle on top in the end
Instructions
in a medium pan bring the oil and garlic to a simmer
next add the shallots and garlic to the pan and saute until a little golden brown and crispy, when they are done take them out of the pan and set them aside.
Next in the same pan add the soy sauces and sesame oil then add the chopped up tofu, toss in the pan until sides get crispy
next add the noodles (cooked) to the pan and add the crispy shallots and scallions and toss all together, adding some sriracha to make it more spicy, then serve right away!
