Black Bean Potato Enchiladas

Ingredients Serving: 3 - 4


Enchiladas:


-3 russet potatoes peeled and chopped roughly

-1/2 cup of vegan butter

-1 can of black beans (I like the spicy black beans from Whole Foods)

-1/2 red onion chopped

-2 jalapenos chopped

-3 cloves of garlic minced

-2 tablespoons olive oil

-1 teaspoon smoked paprika

-1/2 teaspoon ground cumin

-1/4 teaspoon garlic powder

-1/4 teaspoon red pepper flakes

-1/4 teaspoon onion powder

-1/4 teaspoon black pepper

-1 28oz can of enchiladas sauce (I like La Victoria brand)

-bag of corn tortillas

-vegan shredded cheese (I like Follow Your Heart brand)

-half avocado chopped (topping option)

-1 jalapeno sliced (topping option)


Spicy Avocado Cilantro Sauce:


-2 avocados

-2 tablespoons fresh lime juice

-1/2 cup water (a little more or less for desired creamy texture)

-2 jalapenos chopped

-2 garlic cloves minced

-2 teaspoons olive oil

-1/2 bunch of fresh cilantro



Instructions


1.Bring a pot of water to boil then add the potatoes and cook until the potatoes are fork tender, then drain and set potatoes aside.

2.While potatoes are boiling, heat the olive oil in a pan over medium/high heat then add the garlic and saute for a minute. Add jalapenos, red onion, smoked paprika, cumin, garlic powder, red pepper flakes, onion powder and black pepper and saute until onions and jalapenos are softened. Add black beans and mix together then set aside.

3.Next take a potato masher and mash your potatoes adding the butter and mix well. Set aside.

4.Preheat oven to 350F. Next wrap the tortillas in a damp paper towel and steam in the microwave for about 30-45 seconds.

5.Next cover the bottom of your baking dish with some of the enchilada sauce. Then take the tortillas and fill them with the mashed potatoes and black bean mix, roll and face them down in the baking dish, repeat until dish is packed. Next top the tortillas with the remaining enchilada sauce, sprinkle with cheese and place in the oven for about 20-30 minutes or until the edges of the tortillas look crisp.

6.While enchiladas are baking, make the spicy avocado cilantro sauce by putting all the ingredients in your blender and blend on high until desired texture. (feel free to you can adjust ingredients depending on personal taste).

7.Remove from oven to let cool, top with spicy avocado sauce, chopped avocado and jalapenos and any other toppings of your liking and enjoy!
